
Country Borage
COLEUS AMBOINICUS
Also called Indian borage or Mexican mint, this herb is native to Africa, Arabia, and the Indian subcontinent.
In Khmer, its name translates directly to “thick-leaved herb”, referring to its fleshy, broad leaves and their lightly frosted appearance. We also harvest it during the dry season to ensure the best yield and strongest flavour. Its pungent, oregano-like aroma gives our gin a strong, smoky, and earthy character.
In our medicinal forest garden, it grows in small bushes and rarely reaches a great height. In Cambodia, it is traditionally used in cooking and in traditional medicine, particularly for digestive discomfort. You can also find this herb featured in our gin.
